Jeff grew up surrounded by the vibrant tastes of South Africa. From the simple yet comforting mielipap, similar to polenta or grits, to rich curries influenced by South Africa’s Indian community, his early experiences shaped a deep understanding of spices and flavours.
“Growing up, it was about knowing what’s in nature and letting the spices speak,” he explains.
His culinary journey has taken him from South Africa to Vancouver, Halifax, and now Edmonton, exposing him to a mosaic of traditions—from Japanese lunches in Vancouver to Halifax’s late-night donair spots, a familiar culinary tradition in his new home of Edmonton.
At the heart of Baijiu’s menu are the weekly features, where Jeff’s philosophy truly comes alive. Each week, he draws inspiration from a different global cuisine, honouring its cultural and historical roots while reimagining it with Baijiu’s signature Asian-inspired flair. From a Brazilian stew infused with unique spices to South African-inspired flavours, these rotating dishes are more than meals—they’re conversations between cultures and a celebration of culinary heritage.
“It’s my excuse to be a history nerd for two hours a week,” Jeff laughs.
